The licensing requirements for those seeking to harvest, identify or distribute wild harvested mushrooms for sale in New Hampshire is provided along with license application and resources for the industry including restaurants and retail store looking to offer wild harvested mushrooms.

License Requirements

Recent legislation requires those seeking to harvest, identify or distribute wild harvested mushrooms for sale in New Hampshire to apply for and receive a license from the New Hampshire Department of Health and Human Services (DHHS) Food Protection Section.  This includes those offering wild harvested mushrooms to restaurants, retail stores or direct to consumer at a farmer’s market. Those seeking to apply for the license must first successfully complete a course in safe wild mushroom identification and harvesting practices.

Upcoming Course List

July 6-7, 2024, at the Doris L Benz Sandwich Community Center, 18 Heard Rd., Center Sandwich, NH 03227. The course will be held from 9am to 5pm each day which includes the final exam.  Registration for the course is available at Wild Mushroom Food Safety Certification TIER 1 - NEW HAMPSHIRE - JUL 6 – Mushroom Mountain 

October 6, 2024, at the University of New Hampshire, 181 Spaulding Hall, 38 Academic Way, Durham NH 03824.  This course, which is intended for those experienced with Wild Harvested Mushrooms, will be held from 9am-2pm, which includes the final exam.  Registration for the course is available at Wild Mushroom Food Safety Certification TIER 1 - NEW HAMPSHIRE - OCT 6 – Mushroom Mountain

Upon successful completion, course participants will be able to apply for the Wild Harvested Mushroom license with DHHS using the Wild Harvested Mushroom License Application. The license is valid for 5 years.

 

Wild Harvested Mushroom Licensees

Licensees may harvest, identify or distribute wild harvested mushrooms to restaurants, retail stores or direct to consumers including, but not limited to at Farmer's Markets. Individuals who have met the licensing requirements are listed on the DHHS Wild Mushroom Identifier, Harvester, and Distributor Licenses list.

The label should include the following information:

  • Name, address, and license number of Wild Harvested Mushroom Licensee
  • Species of Mushroom
  • Weight sold
  • Date and county of harvesting

How long are retail food establishments required to keep the label from the Wild Harvested Mushrooms?

A copy of label to be retained by food establishment for 90 days.
